Who doesn’t love a good muffin?

This is one of our children’s favourite. A great recipe to make with your children!

Sugar Free Blueberry Muffins (Makes 12)
Ingredients:
1 3/4 Cups Wholemeal Self Raising Flour
1/2 Cup Honey
1 Tsp Cinnamon
2 Eggs
1/2 Cup Coconut Oil
1 Cup Greek Yoghurt
1 Tsp Vanilla extract
1 Cup Blueberries

Recipe:

  1. Preheat oven to 180C.
  2. In a large mixing bowl combine flour and cinnamon.
  3. In a medium bowl combine melted oil and honey and whisk. Add eggs and beat well. Add yoghurt and vanilla and mix well.
  4. Pour wet ingredients into the flour mixture and stir to combine. Gently fold blueberries into the batter.
  5. Spoon into muffin tray/patty pans and bake in oven for roughly 20 minutes until golden.
