This is one of our children’s favourite. A great recipe to make with your children!
Sugar Free Blueberry Muffins (Makes 12)
1 3/4 Cups Wholemeal Self Raising Flour
1/2 Cup Honey
1 Tsp Cinnamon
1/2 Cup Coconut Oil
1 Cup Greek Yoghurt
1 Tsp Vanilla extract
1 Cup Blueberries
- Preheat oven to 180C.
- In a large mixing bowl combine flour and cinnamon.
- In a medium bowl combine melted oil and honey and whisk. Add eggs and beat well. Add yoghurt and vanilla and mix well.
- Pour wet ingredients into the flour mixture and stir to combine. Gently fold blueberries into the batter.
- Spoon into muffin tray/patty pans and bake in oven for roughly 20 minutes until golden.
